Comfort Food

Jillian Gould

University Press of Mississippi

A “hole-in-the-middle” is a piece of bread with the center torn out, with an egg fried on the hole. This paper uses auto-ethnography as well as personal interviews to explore various meanings, recipes, and names for the hole in the middle. It is a simple dish that evokes a range of memories and contexts. Family folklore often is expressed through foodways; likewise, special family meals and recipes may provide comfort, connecting relatives and strengthening family fabric. Unlike other foods in this volume, it is not the taste of the hole-in-the-middle, but the act of making it, that connects the author to her past.
