From the tedium of open-hearth cooking to the convenience of the microwave, home cooking in America has rapidly transformed from a time-consuming chore to a simple task. In so doing, the meaning of “home cooking” also changed into an idea infused with symbolic meanings related to home, family, and community. The changes to the kitchen sparked by the Industrial Revolution and fed by an increasingly consumerism-driven economy led to anxieties that created the notion that the only solution to the nation’s problems was a return to traditional cooking practices. However, this chapter demonstrates that the golden age of home cooking never really existed.
